A forgotten canava transformed into a cultural garden in the heart of Oia.

Oia Oenosart was born from an 18th-century wine canava and a desire to preserve the island’s memory while creating a timeless gathering place. Opened in 2015 following a thoughtful restoration, it has evolved into an intimate destination where Santorini’s winemaking heritage, gastronomy, and artistic expression come together — inviting guests to taste, discover, and linger in a setting beyond the ordinary.

The idea

“The Vine, the Olive Tree, and the Boat.”

Three timeless Aegean symbols define the essence of Oia Oenosart. The vine celebrates Santorini’s volcanic terroir and its deep-rooted wine culture. The olive tree embodies the rituals of the table and the generosity of the land. The boat represents the endless exchange of the Aegean — a journey through cultures, flavors, and traditions carried by the sea.

The canava is not a stage set for the past, but a space where history continues to breathe. Aged walls, simple furnishings, and a quiet planted garden preserve the marks of time, while contemporary art and familiar objects bring new layers of meaning. Here, heritage and the present meet in an atmosphere that feels authentic, intimate, and alive.

Oia Oenosart brings these four expressions together as a dialogue between heritage and creativity. Each reveals a different layer of place — wine through terroir, food through tradition, art through imagination, and culture through the act of gathering around the table.

Wine

A carefully curated cellar of around 250 labels explores the character of Santorini’s volcanic landscape and its exceptional wine tradition. Representing more than 20 producers, the collection brings together indigenous varieties, rare bottles, and mature vintages, with the opportunity to discover many selections by the glass.

Food

Rooted in Greek and Mediterranean traditions, the cuisine celebrates the purity of local ingredients — island produce, seafood, meats, and plant-based creations shaped by the seasons. Through restraint, balance, and precise execution, each dish reveals the essence of its origin.

Paintings, graphic works, ceramics, and collected objects make the canava a living gallery — a cultural space where art is woven into the experience rather than added as decoration. The collection creates a dialogue between contemporary expression, island heritage, and everyday life.

Rooted in volcanic ash, sea winds, and centuries of adaptation, Santorini’s vineyards produce wines of remarkable character and identity. The wine program explores the island’s producers, vintages, and diverse expressions, with guided tastings revealing the stories, techniques, and terroir behind each glass.

Greek & Cycladic influences

The island enters through ingredients, not cliché.

Rooted in Santorini’s culinary heritage, the menu brings together island fava, seafood, local cheeses, seasonal vegetables, and classic Greek references with a refined contemporary approach. Rather than chasing novelty, each dish is shaped to feel inevitable — in harmony with the wines, the landscape, and the quiet pace of the garden.
